Making pierogi is a labor of love. Each pierogi is rolled, cut, stuffed, and pinched by hand. Certain varieties are extremely delicate and require more time and patience to make. Additionally, we only use the highest-quality ingredients and therefore some fillings are much more expensive to produce than others. Because of these factors, we only make smaller batches of these flavors and have to charge a little more to account for the time spent and ingredients used.
Because of our commitment to using only the freshest, highest quality ingredients, some varieties of pierogi are only produced when the ingredients are in-season. Not to mention, some flavors are just better suited for certain weather. Do you really want hot, spicy chili outside in the summery sun of a farmer's market? Once our seasonal variety inventory runs out, we won't make anymore until the following season.
Having said that, most ingredients we use are available year round, they will just be harder to find or more expensive to purchase. Think blueberries in winter. We would consider making seasonal batches off-season for our catering customers. So if you are really craving something specific - just ask - and we'll do everything we can to accommodate your request.
As indicated on the menu, most of our vegetable/starch-based varieties as well as all of our dessert flavors are vegetarian. We are working on adding more vegetarian options, for instance, making the carrot puree with vegetable stock instead of chicken stock. Unfortunately, because of the fact that what makes our pierogi special is Doug's grandmother's secret dough recipe which we use for every variety, we do not have any vegan options at this time.
We are very conscious of allergens. In addition to it being the right thing to do, we truly understand as individuals close to us are affected by severe peanut and seafood allergies. We try our best to accommodate everyone, but due to the ingredients used we cannot meet all specific requirements for the Big 8 Allergens.
Wheat, dairy and eggs are used in every pierogi
We do not use peanuts or tree nuts in any pierogi, but we are a start-up and our production facility is in a shared kitchen that allows the use of allergens such as peanuts and tree nuts. We clean and sanitize shared equipment prior to use, but we cannot guarantee at this time that there is no cross contamination
Certain micro-batches contain crustacean shellfish, but we are careful to prevent cross contamination when cooking fresh
